Homemade Kulfi (Summer Special)
Kulfi is one of the famous dessert of Indian sub-continent. This is even known as traditional ice-cream which is full of creamy flavor, spices and goodness of dry fruits. To me Kulfi means summer, holidays, friends, cousin, fun, get-together and off-course dish full of mummaa’s love. So people! This summer do try this creamy Kulfi and share your feedback with us……….
1 Liter full cream milk + 2 Tbsp milk
200 gms condensed milk
55 gms or ½ Cup milk powder (I used 2 packs of Amul milk powder 27 gms each)
2 Tbsp sugar (optional-use only if you want it a little more sweet)
1/4 Tps nutmeg powdered
½ Tps cardamom powdered
½ Tps saffron
2 Tbsp finely chopped dry fruits (Cashew, Almonds and Pistachios) + 1 Tbsp for garnishing
Take a heavy bottom pan mix milk, condensed milk and milk powder till well incorporated and Cook the mixture on medium flame.
Once the milk comes to boil, cook it for another 30-35 min on low flame. Keep on stirring the milk till it becomes thick and gets a proper kulfi flavour.
In a bowl take 2 Tbsp milk along with nutmeg powder and cardamom powder and mix well. Add it to kulfi mixture along with dry fruits and keep aside to cool down.
Once the mixture cools down pure it into kulfi moulds or kulhads and freeze it for 8-10 hrs or overnight.
Garnish it with dry fruits and serve chill.
