Minty Rice Balls

These deep-fried rice balls are easy to make and the best thing of this recipe is we can make this from leftover rice also.But we have done some alterations by adding a secret ingredient to get minty flavour…..

Minty Rice Balls
3 boiled mashed potatoes
1 cup steamed rice
1 tbs powdered cashew
¼ cup grated cottage cheese
½ cup bread crumbs for dough & ¼ cup bread crumbs for coating
2 tbs finely chopped mint leaves
1 tbs finely chopped coriander leaves
2 tps finely chopped green chilli
1/4tps black pepper
½ cup corn flour slurry
Salt to taste

For minty onion curd salad:-
Hung curd ½ cup
½ tbs finely chopped mint leaves
1 cup onion rings
¼ tps caster sugar
Salt to taste

Add together all ingredients except corn flour slurry and bread crumbs for coating.
Divide the dough in 10-12 equal portions and make medium balls of this dough and flatten them slightly into oval shape.
Dip the rolls in corn flour slurry and bind it with bread crumbs properly & keep the rolls aside for half an hour.
Deep fry the rolls until golden brown.
Serve hot with minty onion curd salad.

For minty onion curd salad-

Mix all the ingredients together and refrigerate for at least an hour.
Salad is ready to be served.
